With over 15 years in the culinary industry, Chef Bailey has established a reputation as a passionate and innovative pastry artist. A proud graduate of Johnson & Wales University, Chef Bailey has honed their craft in some of the most prestigious kitchens and renowned establishments, including The St. Regis Longboat Key, The Glass Knife, and Gerardo’s Italian Bakery.

Chef Bailey’s experience at The St. Regis Longboat Key allowed them to master the art of luxury pastry creation, elevating desserts to an experience that complemented the resort’s high standards. During their time at The Glass Knife, they refined their expertise in contemporary desserts, gaining recognition for their meticulous attention to detail and a modern approach to classic pastry techniques. At Gerardo’s Italian Bakery, Chef Bailey embraced the rich traditions of Italian pastry-making, infusing each creation with authenticity and care.

Now, as the Executive Pastry Chef and driving force behind Smallcakes Lake Mary, Chef Bailey is excited to bring a fresh perspective and an extended menu to the bakery, with a focus on custom cakes for birthdays, weddings, and special occasions. Their vision is to create a warm, inviting environment where every dessert tells a story and every cake is a work of art.
